One Paragraph stories is not necessarily complete stories with clear beginning, middles, and ends. Just an excuse to try to tell a concise moment that works on its own. Lots of legit writers do variations on this, most notably Joe R. Lansdale, who mentioned many times the act of writing a paragraph or two of what might end up to be nonsense to, in a way, clear the pipes.
And if that doesn't grab you; think of these, as Poe states in his 'The Philosophy of Composition' stories meeting the guideline that 'all works of literary art <meet> the limit of a single sitting. And furthermore, if one story doesn't grab you, there is always tomorrow.
